    Can I still do it, or am I too late now?

    And what's the best way to do it please?

    Yes, easy

    Sealable jar - half fill with dry rice.

    To dry rice, put it in oven at about 105degc.....and leave for an hour or so. Take out and pour into jar. Seal and wait until it is completely cold.

    Drop bay leaves into jar and seal. Make sure they aren't stuck together. Soon, in a week or so, you will have dry bay leaves.

      Presumably the rice pulls all of the water out of the leaves?
      Interesting, I had the feeling I would just be able to cut off branches and hang it up in the kitchen to use.
      I might try that as well, I would imagine that your way saves more of the oils, so they taste stronger.

        Sorry to hijack this thread Womble but its sort of related.
        Should I have dry bayleaves for cooking?
        I have a mmmaaaaaasssssiiiiiivvvvvveeeee bayleaf tree in my garden, so I can pick fresh ones whenever I want.
        Is there a culinary reason for using dried bay instead of fresh?

          I think dried have a stronger flavour, I use fresh ones all the time as well.

            I use dried or fresh indiscriminately. And for drying mine, I just hang them from the ceiling in the cupboard under the stairs. Works fine.

              I just cut a small branch off and hang in the kitchen. They are dry enough to put in a jar in about a month.

                I just use fresh all the time, never even considered drying them, thought that was just what you used if you didn't have a fresh tree outside!

                Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

                Which one are you and is it how you want to be?
