  • Any recipes to use up left-over Christmas pudding?

    I was in a saintly (hint hint ) store the other day and they were selling off their Christmas puddings at 50p. I couldn't resist.

    But rather than just eat it, I'd like to bake or do something else with it. Can anyone help with suggestions and recipes?

      Rachel Allen's muffin recipe

      SERVES 6

      INGREDIENTS
      FOR THE MUFFINS

      1 egg

      75ml milk

      30g salted butter

      2 tbsp sherry, whisky or brandy

      125g leftover Christmas pudding

      125g plain flour

      1 tbsp baking powder
      1/2 tsp mixed spice

      75g caster sugar

      FOR THE SHERRY BUTTER ICING

      125g sifted icing sugar

      50g salted butter, softened

      1-2 tbsp sweet sherry, whisky or brandy

      METHOD
      Preheat the oven to 350F or gas mark 4. Line the muffin tins with paper cases.

      Whisk the egg in a bowl. Add the milk, melted butter, sherry and the Christmas pudding.

      Sift the flour, baking powder and mixed spice into another bowl. Add the caster sugar and mix well. Make a well in the centre.

      Add the wet ingredients and mix together until a soft batter forms. Spoon the mixture into the paper cases and bake in the oven for 20-25 minutes. Allow to cool on a wire rack.

      While they are cooking, make the sherry butter icing.

      Mix together the icing sugar and the butter. Add enough sherry, about 1 tbsp, to just soften the mixture and make it spreadable.

      Once the muffins are cool, spread the icing over the top and serve.

      [B]Christmas pudding sundae
      Mop up leftover Christmas pud with a dash of booze and some ice cream - Nigel Slater's dish is made in two minutes flat.

      Ingredients
      a little butter (or leftover brandy butter)

      leftover cooked Christmas pudding

      dash of brandy

      vanilla ice cream, to serve

      Preparation method
      Melt a little butter in a frying pan (I use brandy butter if there’s any still knocking around). Crumble in the leftover Christmas pudding. Pour in a glug of brandy just to keep it moist. When the mixture is piping hot, spoon it over ice cream (or layer it in sundae glasses with the ice cream).

        I always make 3 spare Christmas puds and we eat them as Christmas pud later in the year. I've never used it as an ingredient - I just LERVE Christmas pudding!
