    Bean-stuffed Patty Pan

    serves 4 as a side dish

    2 large (6") patty pan squashes, steamed/boiled 10 mins
    250g shelly beans, boiled for 10 mins
    1 large red onion, chopped
    5 garlic cloves, crushed
    chilli to taste, sliced thinly
    1 tbsp sunflower oil
    450g patty pan/courgette flesh, cubed
    5 carrots, cubed
    1 red pepper (optional: I hate them)
    250g tomatoes, skinned & chopped
    100g rice
    150ml stock or tomato juice
    cheese, grated


    1. Preheat oven to 190c. Cut the patty pans in half lengthwise, place in a roasting dish. Scrape out the flesh & set aside
    2. saute the onion in oil 5 mins, add garlic and saute another 2 mins
    3. add rest of ingredients except cheese
    4. cook the mixture until fairly thick and breaking down. Mash up with a fork, & season
    5. scoop mixture into patty pan shells & top with grated cheese
    6. bake in oven at 190c for about 20 mins, until cheese is bubbling


    I just made this up, I won't be tasting it until 7pm: I'll let you know how it went.

        Sorry Chris, I was seeing an eBayer. Now eating the dish, and it's really quite yummy, spicy but not too much raw heat (I used 2 Lemon Drop chillies). Served it with hot jalapeno sauce all over

            Sweet - sounds good. Can't see how you don't like red pepper though I've never thought of steaming/boiling small squash before, I think I'll give that a go next time!
