  • Courgette pie

    Recipe taken from another site and rejiggled by me, first and only time I have eaten courgettes and will definatly cook this again

    • ½ kilo of courgettes
    • Packet of puff pastry
    • 1 large + 1 medium onion
    • 60 grams of butter
    • 20 ml olive oil
    • 150 grams of cheese
    • 2 beaten eggs
    • Parsley
    • Salt and pepper

    • MAKE TWO POUND LOAF TIN SIZED PIE
    Method
    Clean the courgettes and cut them into small pieces. Boil them in salted water strain well afterwards.
    Grate the onions and add to the courgette. Put all this into a frying pan and cook until the water from the cougettes has been absorbed.



    Add the butter and allow to fry for a while.
    Next add the parsley, salt, pepper, cheese and beaten eggs. Mix.
    Use the oil to coat the baking tin, add the pastry leaving enough to put a lid onto the pie.
    Oil the pastry before adding the mixture.
    Pop the lid on and trim. Cook in a medium oven until the pastry is golden (about 45 minute)

    Is it rejigged as the original recipe had dry rice in it? I saw one this morning and couldn't get my head round the dry rice bit.....this looks excellent!!!

      My original didn't have rice in it, it was an American recipe with cups of this and that and was so big it made three pies so I changed it to metric and reduced the amounts but the rice bit sounds interesting.
      Just had a though I have seen the TV cooks make an oven cooked risotto so if the rice was par cooked and there was there was enough moisture in the pie to finish the cooking of the rice it would be quite nice.

        They put the rice in dry and into the oven for 30 mins. I didn't think that was going to work...much prefer yours.

              only 4kg i must have double that & they're still coming

                I counted my courgette plants yesterday - 13. I may be using ths recipe Hans Mum, thanks.
