following on from the wild food thread idea some ideas for elderflowers.
elderflower cordial.
big bucket of elderflowers, with most of the stalks removed
2 lemons and or limes.
one kettle of hot water.
sugar.
weigh elderflowers and prepare same amount of sugar.
boil kettle and leave for a minute or so, elderflowers burn if its still too hot.
add water to elders, leave overnight.
strain elders and add juice of lemons and zest, to the liquid add sugar heat gently till sugar disolved, taste, add more sugar and lemon if needed, bottle.
use like cordial.
deep fried elderflowers (for crudites with dips)
flour, eggs lemonade, elderflowers with stalks
make batter but instead of adding milk add lemonade, dip and coat elderflowers, deep fry, great with galic and lemon mayo.
sorry about the lack of measurements but i cook by feel hardly ever use scales.
