My few celeriac plants are growing really well but they are putting a lot of effort into generating tops and flowers - should I remove the flower heads before they open up or is it okay to leave these and just let the plant get on with it?

never had a celeriac bolt?.....though have flowered them in year two for seed. 'Fraid RL is right if they've flowered (looks like carrot/parsley flowerhead) then they are rightoffs.
You should never let them dry out...did you have them in modules?
PS tops are good as celeriac is infact the swolln leaf base and not a true root veg, keep tearing off outside leaves to encourage more

I read somewhere it was if there was a cold snap after they were planted out. by Marb67Well, I collected a lot of apples fallen in Autumn that were perfectly fine. Stored in the shed on wooden racks with plenty of air able to get between them.
