    Snoops Muffin recipe

    Snoops Muffin recipe as mentioned on the Cooking Tonight thread sent to me via PM.

    The original is for chocolate and orange, but I often make lemon and blueberry instead. I'm sure lots of other combinations would be possible.

    Muffins (recipe for chocolate and orange, but see the end for lemon and blueberry or plain ones)

    Zest of one orange
    240 g sugar
    5 large eggs
    320 ml sunflower oil
    125 ml pot of plain yogurt
    450 g plain or cake flour
    10 g baking powder
    2 g salt
    Chocolate drops suitable for baking

    Instructions are for a mixer with paddle or flexible beater (ideally) or hand mixer with whisk beaters

    Mix zest and sugar together.
    Add eggs and beat into sugar for five minutes.
    Add the oil and yogurt and beat for 10 seconds.
    Gently fold in flour, salt and baking powder with spatula or the flexible beater at slow speed until just combined.
    Cover and leave in fridge for one hour or overnight. The mixture will rise a bit in the bowl overnight, so make sure you have some room for expansion in the bowl.

    When ready to bake, preheat oven to 210 ºC or gas mark 7 .
    Scoop mixture into muffin cups and place a few chocolate drops on top.
    Place in the oven and immediately reduce temperature to 200 ºC or gas mark 6. Bake for 8 minutes.
    Reduce temperature again to 190 ºC or gas mark 5 and back for another 6-7 minutes till done.

    For lemon and blueberry muffins, replace orange zest with lemon zest and place blueberries on top instead of chocolate.
    For plain muffins, use any zest or a little vanilla extract and sprinkle a small amount of caster sugar on top.

    I get 18-20 medium-sized muffins out of this mixture. They freeze really well.
