I left my sons cress in a pot too long as it has overgrown and sprouted larger leaves and the smaller ones have gone slightly yellower, can you still eat all this?

I have more cress than I can possibly eat at the mo. Has anyone ever tried drying it to use in the same way as dried herbs when cooking? The stuff tastes lovely and it would be a shame to put it on the compost/use as green manure.

If it comes out of the ground easily, it is a valuable plant.
