I've come across recipes to this effect, but most of them, the veg would be thoroughly over-cooked
I've just made beetroot wine (simmer beetroot chunks, use the liquid to brew with).
I thought I might make beetroot soup with the remaining chunks, but although they looked like beetroot, they tasted of nothing very much ... all the flavour had gone along with the juice.
