I don't think the excess air space would cause a problem and I've heard of people using plastic bottles. I tried sterilising a squash bottle with boiling water and the heat distorted it so it wouldn't stand up. Depends on the plastic I suppose.
Personally I use wine bottles as we... er drink quite a bit of wine.
My sloe gin only uses about 5 oz sugar per lb sloes (sometimes less). I do use rather less gin than the typical recipe. Last year I used a litre of gin to about 3lb sloes, made over 1½ litres liqueur, which is enough for us.
Flowers come in too many colours to see the world in black-and-white.
