      • I have a few 1 gallon demijons in the garage, would these be too large for a brew (to much air space) - would this allow it to spoil?

Could I use an old plastic milk carton (cleaned and sterilised of course) as there shouldnt be any fermentation going on.

        • I don't think the excess air space would cause a problem and I've heard of people using plastic bottles. I tried sterilising a squash bottle with boiling water and the heat distorted it so it wouldn't stand up. Depends on the plastic I suppose.
Personally I use wine bottles as we... er drink quite a bit of wine.

          • Blimey there's a lot of sugary recipes about...

Our fruit alcohol recipes are somewhere around a

            3 : 2 : 1 ratio

            3 parts alcohol : 2 parts fruit : 1 part sugar

So our latest 'sloe gin' - Pacharan (Spanish sloe gin) was:

            400 ml ouzo
            200g sloes
            125g sugar
            1 cinnamon stick

            Although our Raspberry Gin was:

            350ml gin
            300g raspberries
            115g sugar

Because we had loads of spare raspberries!

Last years Christmas Gin (very popular!) was:

            300ml gin
            200g sloes
            100g sugar
            2 cinnamon sticks
            3 cloves

            • My sloe gin only uses about 5 oz sugar per lb sloes (sometimes less). I do use rather less gin than the typical recipe. Last year I used a litre of gin to about 3lb sloes, made over 1½ litres liqueur, which is enough for us.
Flowers come in too many colours to see the world in black-and-white.
