    I think that it will be ok - the worry is that fermentation will 'stick' if it is too sweet, but I've started wine off at 1.11 and it's been fine.

      we had this at our dinner party in wales, thanks to the lovely shirley.....it is lovely stuff, OH says that it doesnt quite bother u at first, its only when u get up to move that it bothers you lol......mind u drinking white wine/beers till 3am doesnt help either lol

          Sorry, missed updates to this thread. Apologies Hypnophil.

          Starting at 1.11 you will possibly end with a sweeter wine or as Hazel says, a stronger one. It depends on the capabilities of the yeast you used. Sweeter isn't bad, if you don't like sweet wine, make another batch to the correct proportions (I didn't put sugar weight as it varies depending on the grape juice used) you can blend the two to get a better wine.

          My 5 gallon batch was started on 14th May (I think) and finished yesterday. Started at 1.09 and finished at 0.995 which makes the alcohol approx 13% for this batch.

            Hi Shirley,
            I am gonna make a different batch of wine this evening, but i will see how the other one turns out.
            This is exciting, getting into it now, will have three batches on the go!!!
            My bedroom smells a bit peculiar though, hope i dont get drunk on the fumes LOL

                The new batch is looking ok, but formed a sort of crust which i stirred in.
                There is definately an aroma from them, maybe because the weather is warm.
                The two batches i did on thursday are doing well, i checked with the hydrometer this eve and one is 1.4 and one is on the yellow bit. I assume when it is on green it's ready for degassing.
                Had a tiny taste of both and they do taste much better than the one i made from a kit, but time will tell!

                  I just found this recipe Shirl, brilliant.
                  I have some old fruit teabags in the cupboard, I'm going to dig them out now. I quite fancy a go at an Earl Grey wine too, when I have a bit more experience

                            Shirl, I just racked and tasted your Herbal Fruit Tea wine and Himself says it's the best one yet (out of all my brews) That includes the CC Rioja Kit that cost £38 !
