  • Home made red wine tastes vinegary

    we made some red wine before xmas, followed all the instructions, but it tastes very odd, and undrinkable,

    is there anything that can be done to save it??

    the grapes were lovely tasting ones, grown in our back garden,

    any thoughts people??

    we manages to make 2 and a half bottles, with half the grapes we picked, still have the other half in the freezer ready for this year

    If it is vinegary then the only thing to do is to turn it into vinegar.
    If it just tastes odd or not very nice,keep drinking.The further down the bottle you go the better it tastes!

      Sounds like you let the air get in.....
      Red wine vinegar is pretty good for certain kinds of cooking. Wine which is 'half-way' to vinegar is good in a lot of recipes that call for red wine.
      I'd cook with it (but I agree with Polly that the last glass always tastes a lot better than the first one...)
      Flowers come in too many colours to see the world in black-and-white.

        If it tastes winey?? then put it away for awhile. Minimum 6 months, 12months or longer if you have the patience.

          I made a lot of red wine when I was 16 years old. I finished up throwing it down the sink because I thought it tasted vinegary!

          I now know it was supposed to taste like that!

            thinking about it, the only bottle i tried some of was one that was the last to bottle up, so had a tiny bit of settlement in the bottom of it,

            maybe i should crack open a full, clear bottle,

              vinigar wine

              These words should not be said together. If your wine has gone off/vinigary then you can bottle it and give it away as wine vinigar. This is lovely made into a salad dressing with olive oil. Stick some herbs in it and get even more browny points.
              Hopefully the new bottle will not be so tart. If the wine has fully fermented out then it will be very dry to the taste but will improve by the glass??
