UPDATE:
the mead was a bust! tasted horrible went down the drain.
so I started a new batch with more honey, no ginger, added spices, and enough sugar to make it nicely alcoholic and we will see how that one turns out, so far its fizzing away nicely and smells divine so hopefully it will tatse nicer.
the white grape and apple, was ok-ish but not my cup of tea.
the red grape came out fantastic, not as alcoholic as i would like, but a delicate rose!!!
i have two more gallons on the go, with added sugar.
and have just started another gallon, all juice this time, and added sugar, trying to get the 'body' right this time.
the tea wine is very dry so will back sweeten that, that has been racked to clear.
