On the airlock front - you should be able to see activity in the form of bubbles through the airlock, not sure why you would use a balloon instead

only because if there is any activity, its too slow for me to see unless i stand there staring for an hour
the balloon did the trick, its slowly rose over an hour or two, so I knew it was still 'gassing', so switched the airlock back on and am leaving it for a couple of days, then i will check again.

well it has definitely finished , and believe it or not seems to be ready, so I bottled it rather than using the bag, cos that way I can keep an eye on it and check for any signs of sediment.

sadly, there wasn't 6 bottles worth, I don't know what I did, but i ended up with a glass and a half left over , so i am drinking it now, waste not want not as they say. It is very pleasant too, not too acid, which i hate in a red wine, when it makes you suck your teeth.
I have no idea how alcoholic it ended up cos we had no starting SG, but I will be able to tell after a glass or two ( so will all of you if I am posting later )

      EDIT:

well half a bottle down and this stuff is pretttttyyyy goood! and i ain't dead yet.
