    There could be many reasons why this is happening. I would rather just look for the simple solution. You need to degas it first then put in a clarifying agent. You can get this on-line or at your local wine making supply store......

        Bottles of a thick glass nature and not demijohns.
        10 litres cold water
        1kg cane sugar - I use Billingtons
        3 lemons
        4 tbspns White wine vinegar
        Elderflower heads (the whole umbel - no need to strip)

        Mix sugar into water, add juice of lemons, throw lemon halves in too (best buy unwaxed), add White wine vinegar and stir. Add in elderflower heads and stir again. If you have a brewers bucket put lid on loosely. If using a bucket, cover with a tea towel. Stir regularly over a 24-48 hour period. Strain liquid through muslin into a funnel/bottle. I use Grolsch style pop bottles. Place in cool garage and drink after a couple of weeks minimum. Gorgeous!
