    I got a bit ahead of myslef and picked a load of elderflower today in mind to make elderflower champagne but didnt think to find out what I neede. I now know that I need a lemon and white wine vinegar but havent got any so was wandering can I freeze it until I have a lemon or can I start it now and add the lemon etc afterwards?

    Have you got the sugar? I would put the sugar in your fermenting bin, add the water and the flowers and put in the lemon and vinegar tomorrow.

        Am I the only one that thinks elderflowers smell of cats pee?

          They often do, but not as bad as box hedging!
          Wine etc made from elderflowers smells MUCH nicer than the flowers do.
          Flowers come in too many colours to see the world in black-and-white.

                Thats good to know, I grabbed more than I needed, now to shove all the junk off the large chest freezer so I can pop it in there, at the mo they are in an airtight bag. I picked 3 gallon of them!!!

                You are not alone Snadger, that's the reason I got rid of the tree in my backgarden, only to find out this week that was infact an Elder tree!
