  • anyone made perry???

    Our perry pear tree is laden with pears..it seems a shame to leave them to the birds.
    Has anyone tried making perry? I've done a bit of Googling, but would love to have a basic recipe someone has found successful!

    Yes, we have Just follow the same procedure as making cider from apples - chop, crush, press, put juice in bucket, add yeast, wait. Unless you want it clear (not cloudy) in which case you'd have to add pectolaze to it as well. You might not need to add yeast either, but we always add a teaspoon or 2 just to kick it off.
    If you want to, you can taste and analyze the juice before you start it - looking for a good balance of sweetness and acidity, and tannin (the dryness of it) if anything is lacking, you can add; lemon juice or citric acid to raise the acidity; extra sugar to make it sweeter; black tea for more tannin.
    Also, if the pears are all the same type you can get a better blend by adding some apples (cookers are good for acidity, russetts for tannin)
