I've got one on the go at the mo from good ol' CJJ Berry -

6lb apples roughly chopped simmered in 1 gal water for 10-15mins. strain onto 2 & a half lbs sugar & thinly peeled rind of a lemon & stir. When lukewarm add lemon juice yeast, yeast nutrient & a tin of grape concentrate (wilko or brew shop) cover, then after a few days strain into a dj & stand well back!

I started some off 2 wks ago & it's still fizzing away like mad.

A good way to use up windfall & titchy apples that you can't be @rsed to peel for other recipes (chutneys, pies etc).
