Cider from shopbought apple juice

    The cider seems to have fermented out now. If I rack it into a sterelized demijohn and then again after a day or two to remove the sediment, will it be ready for bottling?

    How long then do I leave it to mature before tasting it.

      Rack it of the yeast lees and leave it to clear - feel free to have a taste - you may like it just the way it is. How long you wait to drink it is totally up to you. I think I was patient and waited a few weeks for it to clear. Use the empty demijohn to put another batch to go!!

                  I am most chuffed today. The first batch of cider is now bottled (8 bottles 75 cl) and the second batch is in the demijohns. I have added exra sugar this time to give it a bit more va va vooom in the tast and alcohol department.

                  It will be labelled as Piglets Special Sui-cider and hopefully will come in at about 5.5-6%

                              new online,just emigrated to nz,live in napier inthe middle of 1000s of acres of orchards,Just been given 600 litres of organic biodynamic apple juice.
                              Cider here we come!

                                4.5L of pure apple juice
                                1tsp yeast

                                Method:

                                4. leave for 36-48hrs to ferment then top with with the remaining of the juice (cant fill it right up at the start as it will foam quite a bit)

                                6. Rack off and drink (or if you like cider fizzy then prime as usual)

                                I have tried this and it was quite acceptable - similar to scrumpy rather than strongbow if you get my drift
                                Has anyone else tried this one? I like the sound of it although I don't have any demijohns.
