I have 5,000,000 plums to use up so have started plum wine using recipe from here (of course!).
I've done the first bit (plums in sugar overnight) and now i need to add yeast, nutrient and PECTIC ENZYME.
Thought i had some but can only find PECTOLYTIC ENZYME - i have two questions:
1. are they the same thing?
2. it is a little out of date (ie Dec 1993!)
any advice please?
(no local shop but could order some online - could i add it later or does it need to be added at this stage?
