  • Pectic Enzyme question...

    I have 5,000,000 plums to use up so have started plum wine using recipe from here (of course!).

    I've done the first bit (plums in sugar overnight) and now i need to add yeast, nutrient and PECTIC ENZYME.

    Thought i had some but can only find PECTOLYTIC ENZYME - i have two questions:

    1. are they the same thing?
    2. it is a little out of date (ie Dec 1993!)

    any advice please?

    (no local shop but could order some online - could i add it later or does it need to be added at this stage?

    I don't know how the out of date will affect it but would buy new as that is quite out of date! It can also be sold as Pectolase which might make it easier to find. Wilkinson's sell it in their stores if you have one nearby or there are usually lots of brewery supplies on ebay

      thanks Shirley - never thought to look on ebay for something like that & as we dont have Wilko's in Scotland, that isnt really an option either! Have ordered some and begged them to post out first class today.

      Do you think i could do the other bits and just add the pectic stuff tomorrow or is that too late?

        I haven't made plum wine but think you would be okay adding the Pectolase in a day or so.

          Pectolase, Pectolic Enzyme, Pectic Enzyme are pretty much the same thing and can be added before during and after fermentation for the purposes of removing/destroying pectin, best used at the start for colour and flavour extraction, I have been using Rohapect VR-C Enzyme, flavour and colour etc, and an aid to filtering! or so it say's on the lable, "does what it says on the tin"!, more expensive than the others so I hope it will work twice as well!!!.

            Plum takes forever to clear
            I've made 10 litres of it, and have just read a book that basically says I've done it all wrong by letting the skins sit on the pulp for 3 days

            (he is ever so sniffy about country wines though)

              oh well, the plums didnt cost me anything so i guess all i'll waste is a bit of time and the cost of some sugar and the wee bits and pieces for nutrient, yeast, etc....no big loss and fun to try anyway.....time will tell....

                  Do you think that wine makers are like gardeners, disagreeing on the 'best' way of doing things!?

                  Besides the number one rule of 'keep everything absolutely clean', it's all pretty fluid, I think.

                    i think you're right Hazel, as I'm learning! I've had a couple of pretty drinkable varieties so far so I'll keep trying! Funny thing is my parents used to make home made wine all the time when I was a wee girl (very successfully) but now my Mum cant remember a single useful tip for me!
