home grown grapes

I was wondering................................
have just picked 26llbs grapes, last year we made wine using yeast, now I know that in France,Italy etc they don't use yeast, just the natural yeasts on the grapes. Has anyone got a good recipe/method for this?

Mrswadders,
I did it with my own grapes 3 years ago (was hideous though, but I think I have found the reason why.)
Give me a day and I will get back to you with the recipe I used.
