      Alrighty,...

      Chocolate Liquor #1

      100g Chocolate
      200g Sugar
      1/2l Milk
      1/8l Cognac
1/8l Neutral grain spirit (not sure if you can get this in the UK, but you can just replace it with Cognac in this recipe).

Finely cut the chocolate and melt with the sugar in the milk, stirring continuously bringing to the boil.
Add the alcohol, let the liquid cool down completely.
Fill into bottle and leave 14 days in a cold environment.

      Chocolate Liquor 2
      150g Chocolate
      5/8l Milk
      250g Sugar
      3 eggs
1/4l Neutral grain spirit (or replace with cognac)
      1/4l Cognac

Separate the eggs, keep the yolks.
Prepare a big bowl with cold water.
Heat the milk in a small pot
In a second pot, gently heat the chocolate and very slowly dilute with the warm milk.
Add the sugar and the three egg yolks.
On a small fire, gently heat while continously beating until nearly boiling point.
Put into the bowl with the cold water, adding the alcohol.
Continue beating until completely cooled, fill into bottle.
Keep the liquor well corked and keep in a cool location.
