Elderflower concoctions!

The time is nearly upon us when the elderflowers are almost in bloom and ready to be plucked of the trees and made into a number of fantastic brews - this years glut will be made into wine, elderflower champagne and some elderflower and lime cordial here - how about everyone else?

The nicest cocktail I ever made with my cordial was to bash up a bit of cucumber with the ice, add one part gin to one part pressed apple, a dash of elderflower cordial and make it long with soda water - fantastic for idling away some time in the sun

Sounds lovely, all my elderberry fizz exploded while we were on holiday last year, the ants are still benefitting in the shed...
I have also got elderberry wine on the go, not yet ready to be bottled, some on its own, some mixed with runnerbean, or sloe or blackberry.

I made Elderflower Fizz for the first time last year, didn't make nearly enough and the Elderflowers where already disappearing

It was kept in plastic bottles but still had to let the gas out every few days! Mixed up the "River Cottage" recipy using lime & lemon instead of just lemon.

This year i think the plan is to make much much more... might leave in large water bottles. I think I'll try making a wine too.

Elderflower and Lime Cordial, that sounds nice, could you post the recipe please :-)

I made a couple of batches of elderberry cordial last year. Mostly it was absolutely delicious but one batch turned out a light coffee colour, does it oxidise and what did I do wrong. I must admit it was a different recipe as I was looking at quite a few.

Elderflower and Lemon Tom Collins:
25ml Gin
25ml Limoncello
25ml Lemon Juice
25ml Elderflower Cordial
Top up with soda water or lemonade

A great cocktail for sunny days
