  • elderflower fizz with no lemons?

    I have some elderflowers picked yesterday but used all lemons on the cordial.

    We've got citric acid and the jif stuff from a squeezy bottle. Could I use those to substitute? Or how long do the flowers keep?

    Not sure about what else you could use but think the flowers only last a relatively short period of time (about a day or so I think) before the natural yeast does a runner. Seem to remember reading somewhere that you can freeze them but that could be my imagination though so don't trust me on that one.

      Couldn't you just get a couple more lemons?

      I would have thought that the squeezy lemon or citric acid would be fine.

        I leave for work at 7am and I don't get home at the earliest till 6:30pm

          Are all the shops shut at 6.30?

          Of course you would have bought more lemons if you could.

          Round my way, we have many 24 hours shops including a 24 hour fruit and veg shop, it's so easy to get used to. If we need an orange at 2 in the morning, just go and get it. Best one though is the 24 hour off-licence, very handy and they also sell lightbulbs.

            I'm sure citrics and juice will work fine, it just won't smell as "zesty" but the acid will do the job.

              Jif lemon would be better than citric acid. It's supposed to be pure lemon juice.

                I have had the same problem.... so I have frozen the batches in plastic bags air squeezed out, labelled til I can make more later in the summer. I have def read you can freeze them.

                I am not going into town just for lemons so they will wait til I can do it after holiday now.

                  Can't see why they wouldn't freeze OK.
                  Flowers come in too many colours to see the world in black-and-white.

                    yup, I've picked them and frozen them. Going to leave them in the freezer to make cordial later in the year. Will pick some fresh ones for the fizz
