    It's not often I make a wine that is really unpalatable. But the blackcurrant really tastes weird.

    Was started off 22 august and has been racked a few times. Pretty sure it was CJ Berry's recipe as I normally use him.

    It is now beautifully clear but is just gross..... has anyone else had a horrible one? Not even sure a dash of lemonade will sort it out.

    Any chance it will mellow and be drinkable in the next few months or years?

    Much better thing to do with blackcurrants.

    Half fill a jar(chicken tonight style is brill) with topped and tailed berries. Fill the remainder of the jar with sugar. Then pour in vodka or gin until the jar will hold no more. Seal the jar with a screw top lid. Shake the jar every day until the sugar has disolved. After a few months you will have the nicest blackcurrant liqueur. Tastes like ribena but does funny things to your legs.

      I guess that a wild yeast got in there Janeyo - from memory the blackcurrants aren't boiled up (which would kill any natural yeasts), but you add a campden tablet, leave 24hrs then add yeast/nutrient. Do you remember if you added the campden tablet?

        I have blackcurrant gin, blackcurrant brandy and blackcurrant vodka and they all turn out fine

        I am pretty sure I did add the campden tablet, but the piece of paper has got wet with the notes on so can't be sure when.

        Guess I just chalk this one up as unlucky

          I'd try leaving it if you've got the room janey. We made a blackcurrant and something or other a few years ago that was very odd when 'new', made your mouth nearly turn inside out. But when Jez unearthed it in the garage about 18 months later, it was quite nice.
