Elderflower wine & tannin

Can anyone help me?
I am embarking on making my first batch of elderflower wine & some recipes say that you use tannin & some don't - Should I put tannin in or not? I don't have any & will need to go & get some. If I don't use tannin, what difference will it make to the wine?

'A small quantity of tannin will vastly improve the taste of most wines, giving them a zest or bite which is otherwise lacking....it is the tannin in a wine wihich gives an impression of dryness in the mouth after drinking; if the right amount of tannin is present the wine will be supple and zestful; too little, flat & insipid; if too much, harsh, astringent & bitter.'

In flower & grain wines add one teaspoon of grape tannin, a few oak leaves or pear peelings, or one tablespoon of strong tea per gallon... '
