Elderflowers anyone?

    I have a slight problem .........in that my fizz is brewing nicely in the bucket but we are going to vinstock and I'm not sure if the dd's will remember to burp the bottles ......can I leave it in the bucket till we get back ?

      You can't leave it in a bucket for very long otherwise you won't get bubbles in your brew as they'll already have bubbled out. I ended up having some on the go last year when I needed to go away for a few days so gave it a good burp before I left and then put it in the fridge to slow it down and it was fine and very tasty at a party later in the year. I've never found it necessary to put yeast in though as I find it bubbles nicely of it's own accord after a few days so yours may be rather more gassy if you've added additinal yeast so the risk might be greater of explosion.

        It's now been bottled and the DD's have strict instruction to keep an eye on things and release gas as necessary......

                Funny story on elderflower fizz. We took two bottles to our friend's birthday party last summer and I put them in a bag in the estate's boot. We took our dog with us. Driving twenty miles or so to Uttoxeter must have taken it's toll because as we went past Sudbury one bottle popped itself and the dog must have thought he'd been shot. At the same time as trying not to leave the dual carriageway in a fit of fright our pooch jumped the dividing net and flung himself at my thighs . Needless to say he was dripping and sticky along with me by the time we arrived. Mr VVG was cursing the stuff and was still cleaning the interior weeks later. His sense of humor wasn't helped by my telling everyone the story through my stifled giggles. The dog wouldn't get in the rear for ages afterwards. Our friend wouldn't open the other bottle and wrapped it in a towel, putting it in his garage.
                I told Mr VVG that the elderflower was coming out already to which his response was "I hope you're not thinking of making that s@dding stuff again!"

                  brilliant! I am going to be storing the bottles of fizz downstairs in a cardboard box in the basement, so if they do explode, at least it won't go everywhere. Have heard too many horror stories already!

                  I made some 48 hour elder cordial, which is now ready for bottling - it smells and looks lovely! I am going to sieve it, will post pics/report back on taste soon Thanks for all your help If it is nice, i am going to pop out and get more elders, I found about 8 trees brimming with flowers just down the road from me...

                        We picked a huge bag of elderflowers from an obliging hedgerow yesterday. I want to make cordial, so popped into the Chemist this morning to buy the citric acid and they've sold out!!! The lady behind the counter said 'Everyone must be making Elderflower Cordial at the moment!'

                              My last years efforts were not as good as the year before it almost seemed to oxidise,had a slight brownish tinge. Hoping for better results this year. Has anyone frozen the elder flowers and would it work if I tried it. All suggestions gratefully received

                                Okay two and a bit days and my fizz isnt fizzing - How to I get it going? Do you just bung yeast in directly? Or yeast AND sugar, or take some liquid out and put the yeast in that...? HELP I'm determined not to miss out this year!
