Hi everyone, can anyone shed any light on mixing different types of apples to make cider? Last summer was or first batch, and it was nice but not amazing. i have been told that we need to mix the apple types - is there a rule to this? We have a discovery apple tree in the garden which yielded about 20L of pressed juice just in a day's picking, and this year have access to various other trees (2 orchards!!) so it would be nice to know if there are any set rules...thanks

There are loads of things on t'interweb about apple mixes. Most recommend a mix of dessert and cooking apples. I just use the apples my mate chucks my way, pound them up and ferment the juice and it tastes wonderful though its a pain in the bum mashing them! Have just robbed a recipe for turbo cider from a friend that Im trying while I wait for the apples: gallon of cheapest apple juice from supermarket, 1 jar of cheapest honey, yeast, yeast nutrient. Warm honey slightly, mix with some of juice, put in sterile demijohn, add yeast and nutrient, shake, bung, put in warm place. Allegedly it is ready in 3 weeks. Its cost about a fiver coz I was too impatient to wait for the cheapest apple juice and honey, but its bubbling like mad and on my current financial circs Ill be drinking it even if it tastes like meths. Ill report how it goes
