    I am just going to start a Rumtoft for the first time - any tips or hints please? can I put in over-ripe or slightly bruised fruit? I have a bittle of spicy rum to put over the fruit - will this be okay?

    I wouldnt use over ripe or bruised fruit, I had to chuck mine out as it went mouldy dont know why or weather to do another one this year.
    Basic recipe is
    1lb fruit
    1/2 lb sugar
    cover it with a fingers width of Jamaican rum.
    I found a pound of each fruit too much for the size jar I had so would only use 1/2 pound fruit to 1/4lb of sugar if I do it again.
    Gardening ..... begins with daybreak
    and ends with backache
