Verjuice - a very acidic juice made by pressing unripe grapes, crab-apples or other sour fruit.
Just wondering and thinking of having a go. Before I step out into the deep end has anyone else every made it? I've got unripe plums, apples and for wackyness, blackberries.
My first stab will just involve squishing and straining before bottling in sterilized jars. Maybe a touch of citric acid to help keep things sweet.
