Anything in particular? I've only ever used the tub of ordinary wine yeast I bought from the local chemist's home brew section.

I dared - it was awesome!
I only started making wine last year - so only had a demi johns worth of damson, I had apple, pear, rosehip & tinned variety's as well as damson gin, crab apple gin & sloe & cinnamon gin.
this year....
I have ten gallons of damson on the go - as it was my favourite out of the lot with crab apple gin a close second.(if I had more demijohns I would have done more)
I found it good to get your hands into the juice & squeeze the damsons off the stones into pulp (before) adding the campden tablets to kill off anything nasty
Its been fermenting since the end of sept so decided to give it a taste a few days ago....
its already really nice with a warm boozy hit - cant wait until next summer to crack it open.
another hint - put some in tiny bottles (Im using some glass ones from health drinks)
so you can taste every so often with out spoiling a big bottle

this is my shelves full of the damson goodness!
the jars are slightly tilted on bits of wood so you can get to the bottom of it with your siphon tubes without disturbing the lees.
the baggage labels are from the pound shop - as there are different batches & I put on the starting gravity & date (as I always forget)
I did put stickers on but they get grubby & some are hard to wash off so went for the clip-ons insteadAttached Files
