Real Cidermaking on a Small Scale - Michael Pooley & John Lomax (ISBN: 1-85486-195-6) is a good starting point.
For more information on equipment etc. visit the Cider Making FAQ of the ukcider wiki here: http://ukcider.co.uk/wiki/index.php/Cider_makers_FAQ which has a lot of useful stuff. There are also articles on pressing: http://ukcider.co.uk/wiki/index.php/...th_Screw_Press making a press: http://ukcider.co.uk/wiki/index.php/...de_Cider_Press and also a scratter (mill): http://ukcider.co.uk/wiki/index.php/Homemade_Scratter
More advanced information can be found on Andrew Lea's indispensible 'Science of Cidermaking' website here: http://www.cider.org.uk/frameset.htm which is worth reading even if it may seem a bit more advanced than you require.
