    I'm just reading in Wikipedia that in Baden-Württemberg, Germany, over 90% of the Jerusalem artichoke crop is used to produce a spirit called "Topinambur (de)", "Topi" or "Rossler". It describes the brandyas fruity with a slight nutty-sweet flavour.

    I was wondering if anyone has ever tried to make this or any other Jerusalem artichokes drink. Thanks!

    I've made Jerusalem artichoke wine, some years ago.

    Not the greatest of successes, as I recall - it was too sweet, for a start, but that would have been my fault for putting too much sugar. Also remember it as being a right pain to start, as all the tubers had to be scrubbed/peeled.

    I'll dig my notes out in the morning for more detail.
