Strictly speaking Cider is made from Cider apples, bitters, sweets and tarts being blended to achieve the required style, varieties differ from county to county.

I've just started my first bath of cider. Instructions said to use a Campden tablet on the fresh juice and then add yeast 2 days later. So I've killed all the natural yeast and added general wine yeast at a rate of one teaspoon per demijohn.
