Started drinking it as soon as it was bottled, refreshing and sherberty in a ginger beer sort of way. The last few bottles were stashed at the back of a cupboard for a whole year (I made three five gallon batches that year). Just had to watch out for the sediment as it was lifted by the gas when opened.
