    plum time so i thought it would be good to bump this thread. but i also want to know if i can freeze plums by just popping them in a bag and sticking them in the freezer till i have enough for the recipe?

        Arent Damsons wonderful?!
        Damson Jam is (in my opinion) the best in the world
        Damson chutney is fab
        and pickled damsons....well does it get any better...?

        (Just wish I could get my hands on some!!)

          Gosh I hope so, that's what I have been doing with greengages until I have enough to make another batch of jam!
          Damson jam is one of my favourites. I made a load of plum chutney last year and it was great. I have already made 3 batches this year and the next plum tree is ripening. More chutney AND some jam I think. Delia has a nice recipe for damson chutney.

            plumsdamsons in grappa, that is yummy, or raisins in grappa, or peaches in grappa, basically any not so juicy fruit in grappa. Lovely on ice cream or on it's own after dinner....

                It's rather lovely to be 'bumped' occasionally, (see Wellie curtsey) but I'm on my last jar now of said 'I hate chutney' Chutney.
                Given half a chance, I'd prefer outright to make the recipe with Damsons, so I'm going to do just that very thing. Call me boring, but if it ain't broke, I'm not about to fix it......X

                  Flum, I quite fancy trying this as I have a HUGE plum glut at the mo. How much vinegar, what type, what spices and how much and same for sugar please?

                      Hello Strawberry delight, and Welcome To The Grapevine from me....

                      I'm really pleased that you've stuck to the original recipe that I posted up.
                      Recipes are such a personal thing, but when they've been finely tuned by a professional already in a book, I think it's important to give the recipe credence in the first instance, see how you like the taste, and if after that you find it a bit too 'this or that', to THEN do something to alter it to your own liking. So I applaude you, if that's allowed...

                      Incidentally, if it's not a secret, you might think about putting your location in your profile, so that we can better help out on gardening problems when you need anyone to?
