At step 2 where it says "drain and dry thoroughly" do I rinse them as well? Just a bit concerned about the ammount of salt!

Just made some of this stuff. Couldn't find the scales so just guestimated quantities. Dried the courgettes off after steeping in brine and put them in large bowl.....covered lot with vinegar mix. Will 'jar it up' when i get a bit of time.My Majesty made for him a garden anew in order

Did you use the right amounts of turmeric and mustard seeds - well crushed, Snadge? You could always add some more mustard powder, or chillies - that should pack a punch or two! And how big were the courgettes? I only use the slim ones - and have been experimenting with how thinly I slice them. The latest batch has been passed to my neighbour as her family have formed a strong liking for it!Whooops - now what are the dogs getting up to?

Unlike piccalili this stuff leaves the vinegar plus other stuff behind when lifted out of jar with fork. It is quite tasteless to my pallette. Courgette is crunchy but lacks any real taste.
Yes I did use two 350 ml bottles of cider vinegar to get the 500ml required and still have 200ml left!
The only thing I guestimated was the sugar and the weight of courgettes (I'm a very good guesser!)
The liquid was just enough to cover the courgettes so I couldn't have been far wrong!My Majesty made for him a garden anew in order

I added colmans english powdered mustard, tumeric and mustard seeds (uncrushed)

If you didn't like then that's fine...I'll let you off...however,getting the sugar right is a must.I made a batch and forgot to add any and it really was disgusting.the fates lead him who will;him who won't they drag.

I've been using a mix of yellow and green courgettes with red onion and it looks very pretty. One question ..why if the jars are sterilised must it be kept in the fridge? I don't store pickled onions or pickled beetroot in the fridge.S*d the housework I have a lottie to dig
