    Munch, ordinary vinegar, brown or white will do the job just taste slightly different.

    Baz, welcome to the Vine We use a proportion of balsamic for pickling beetroot, it adds a lovely extra depth. A trip to Lidl might be on the cards

    Sterilising in this house just involves a run through the dishwasher. If anything is particularly icky, we chuck a spoonful of VWP (hombrewing steriliser) in the dispenser. But ordinary dishwashing detergant contains bleaching agents which are good enough as a sterilizer

      Thanks for the tips, I have just discovered that Sainsbury sell Cider Vinegar for just 97p for 500ml so that not to bad after all!
      I like to sound of Balsamic too

        Just an update.

        I was making flatbreads and felafels for lunch today and was going to make a tomato salsa for the side; so I chopped some toms, and added some of these picked courgettes chopped finely, some pepper and a squish of mayo to bind it and Mr Z was in raptures.

        The courgettes were still lovely and crisp as well - cushtie!

          Just bumping again. I mentioned this to a contact yesterday and have emailed him the link - so I am guessing it's time soon for us to start thinking about make more. Be prepared as they say - get the ingredients in, save some [more] jars and get pickling.

          I still use this every week [I pickled lots and lots of this], and this year will make smaller jars and give them away. I did keep this to myself last year but now I know how much we need I can give away a fair amount.

              I made some t'other day and used a mix of yellow and green courgettes and a red onion. Very pretty it looks too

                  I've got a batch of this on the go as we speak, it's quite similar to my Cucumber pickle recipe which goes down a treat in our house so i have high hopes!

                    It is totally gorgeous. Another batch in the fridge as we speak - I even bought the courgettes as I couldn't wait for mine!

                      Very timely, was just wondering what to do with the salad drawer full of courgettes. There's probably another 3 or 4 when I go up the lottie later too Now just need some more jars!

                      Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

                      Which one are you and is it how you want to be?
