  • Beginners advice!!

    Hi

    Sorry i bet you get asked this all the time, could you please give me some tips and recipes for making some jam please? I would love to start making my own - thinking of giving some as Christmas presents!!

    3lbs fruit. A little water, more if the fruit is a 'hard' type. Cook gently until the fruit is very soft.
    Add 3lbs sugar (and pectin for the types of fruit that need it, starwberries are among the worst).
    Heat gently until the sugar is FULLY dissolved, then boil until it reaches 'setting point' (cold saucers in the fridge, put a teaspoonful of jam on the cold saucer, let it cool, then push a finger through the bit of jam, if it wrinkles, it's done).
    Should make 5lbs jam

    EITHER put in hot jars and cover at once, OR allow to cool a bit, then put in jars, then allow to cool completely before covering. NEVER put lids on 'warm' jam, only on really hot or completely cold.
    Flowers come in too many colours to see the world in black-and-white.
