Drying herbs (another thread)

Was looking to dry some of my herbs (woody mainly - rosemary, thyme, oregano and some sage).

I found this quite helpful - I'd never considered blanching them though.

I may consider tying them in bunches and then tying them to the racks in the oven on a very low heat. Putting the shelf as high as possible to give me the required height to allow the herbs to suspend fully and allow air to circulate sufficiently. We have a fan-assisted oven, so we'll have the required heat and "draft" to hopefully dry them successfully.

I've always just air dried mine - but it does get a bit awkward, I don't have that many places to hang them, so getting them done quicker in the oven (we've got a fan assisted oven too) is definitely something I'm going to try.

That's handy - got loads of oregano to dry. And I really like the idea of making up some little bouquet garni.

Only one problem - it says gather herbs on a dry sunny day? We should be so lucky!

Much of my marjoram is in flower - anyone know if I can still dry it or will the flavour have turned?

Try a dehydrator like reviewed in GYO magazine last year great for all excess fruit, veg or herbs
