Preserving pans

    I saw a few Berry Pans at a car boot last week. I was looking at one in a hardware store earlier today, only £15 which I thought quite reasonable.

    I've been making jams/chutneys for a fundraiser, might try Freecycle to see if anyone has an old unused one they might be happy to give me.

      Don't mind me asking but what is a preserving pan and what are the advatages?
      I am certain that the day my boat comes in, I'll be at the airport.

        Got an aluminium preserving pan for £5 off ebay and copper preserving pan from an auction for £20. Deffo worth shopping around.

        I think they do make a difference when making preserves.

          For anyone out there with an induction hob - check the pan will work on it before spending the money. When we moved I discovered my lovely Cuisinox pans (copper bottomed) didn't, so OH had to come home from town on his bike, balancing a set of John Lewis stainless steel ones!

          Maslin pan from Lakeland works fine.

            A proper preserving pan is wider at the rim, which means that excess water evaporates quickly, and is less likely to boil over than if you use a straight sided pan. They also have a very solid bottom (wish I did) that distributes the heat evenly so you don't get hotspots which could cause scalding.
