  • Delia's Chilli Jam

    hello

i have just made my 1st ever batch of jam (used up 2lbs of tomatoes & several chillis!) - am so proud of myself!

However.... i've poured it into the hot sterilised jars, put the lids on and its cooling as we speak but is it supposed to be really runny!!??

I have read that jams etc thicken as they cool & i suspect this is more of a sweet chilli sauce than a jam but its really runny!?!

Sounds fab, newbie - I think that it may thicken on cooling (I think that my sloppy delia spiced runner bean pickle did, a bit), but even if it doesn't, it'll still taste wonderul!

I don't think you've gone wrong, just followed the recipe. I did just the same and got quite runny jam. But, since it's a dipping sauce it doesn't matter. The Sarah raven recipe is exactly the same too.

I also followed a chilli jam recipe from the 'Vine (CJ's???) and that suggested boiling it for way longer than the Delia recipe. It did come out thincker and darker - but it's a trade off as got less of it to bottle. I like both - stick with whichever you prefer!
        Cheers
