Hi guys, and huge apologies if this has already been done, I couldnt find it anywhere ... I have a whole five ears of corn (wow, yes, bumper harvest, hmmm!). Anyhoo. can I freeze them do you think? OH wants them for the bbq in spring!!

Freezing sweetcorn?

I picked mine today and was wondering what to do so I'll definitely try and freeze some. I didn't want to leave them on the plants which were starting to look a bit sad. Just out of interest though, how long could I have left the cobs on the plants? The nights are starting to get really chilly, and I think we had our first frost this week so I took the plunge and picked the lot (well the 7 that grew tassels!)Julie

I had quite a lot last year, just striped the husks off and shoved them in the freezer. Can't stand the stuff myself buy OH loves it and earlly enjoyed them. Best to freeze as soon as you can as I'm told them deteriorate on picking.

Yes, you're right Alison.
As SOON as you pick a sweetcorn cob from the plant, it's sugars turn to starch.
And very simply, that means that its' sweetness decreases with every second that it's in your hand and not in a pan of boiling water, to arrest its deterioration.
There! I've managed to say that without cocking it up!
NOW! if you want to freeze that what you've just done...
Whilst the sweetcorn cob is 'blanching' in the boiling water: fill yourself a bowl of ice-cold water. When the cobs are blanched (a minute or two is ample)... plunge the cobs in the ice cold water, drain, and then wrap individually in clingfilm and freeze.
