    Hello

    I'm just contemplating what to do with my excess of chillis and wondered about making a jar or two of "lazy chilli," you know like the lazy garlic that you buy.

    Is it just a case of mincing the fresh chillis, putting it in a jar and pouring vinegar over, or is there more to it than that? Also, what is the best type of vinegar to use, and how long would it keep for?

    Can't help you on the 'lazy chilli' idea but I dried all of mine last year and put them in a jar - I now use them as and when since my crop failed totally this year

      I think the lazy stuff you get in shops is dried first, but I could be wrong. I often am

          Simple chilli and pepper sauce!!

          Use for cooking with or on the side of your plate!

          Depending how hot you like it add as many chilli's as you like, this is just a guide for the small amount of sauce that I make about once a month for myself! It will sit happily in the fridge in a sterile jar for about 4 weeks provided and this is important; that you use a clean spoon each time to serve it with or put in a sterile bottle so you can just poor it out! If you like you can increase the amount and freeze some in zip bags or airtight containers!

          You will need!
          A blender with a glass jar!
          A smallish saucepan, unless you are planing to make enough to feed an army!

          INGREDIENTS.

          A mix of Bell peppers, red, green, yellow, orange whatever. I use about a 1/4 of each!
          A mix of herbs to taste, fresh is best! Small amount of what ever mix you have or like.
          Couple of spring onions, green stalks as well and or some chives of any sort.
          6-8 hot chilli's, I mostly use scotch bonnet's as gives a nice light fresh flavour and lots of heat!
          A dash of olive oil, just enough for thin cover on the bottom of saucepan.
          small amount of water to blend with, add a little as you go, just enough to get ingredients moving in the blender jar!

          Rough chop bell peppers and add to blender.
          Put whole chilli's and all other ingredients except the oil into the blender.
          Blend together till smooth, as I said adding a little water at a time, you don't want it too runny!

          Heat the oil in the sauce pan until it just starts to smoke do not let it burn though!

          poor the hot oil over the top of the mix in the blender, watch out as it will spit sizzle a bit so do it quite slowly! Now poor the mix into your jars or bottles. the oil will rise to the top when it settles! There should be just enough oil to make a thin film on top to seal off the sauce, you can always add a touch more hot oil if needed!

          If you do not have a glass blender then cook off the chilli mix with the oil in the saucepan for a couple of minuets. you can do this in any case if you want a thicker sauce just reduce the sauce at a medium simmer until it has thickened slightly then poor into warm clean jars or bottles!

          You can use your own ideas to add whatever you think will go nice, like some garlic! For a sweeter version just add some tomato sauce or fresh tomatoes is even better!

            I chopped mine up and froze in an ice cube container, 1/2 chilli per cube topped up with water.
            Imagination is everything, it is a preview of what is to become.
