I'm just contemplating what to do with my excess of chillis and wondered about making a jar or two of "lazy chilli," you know like the lazy garlic that you buy.
Is it just a case of mincing the fresh chillis, putting it in a jar and pouring vinegar over, or is there more to it than that? Also, what is the best type of vinegar to use, and how long would it keep for?
