  • Freezing Aubergine/Eggplant??

    Has anyone successfully frozen aubergines? We have a huge glut of them right now (growing in NZ) and I was thinking about either throwing whole fruit into the freezer, or chopping into cubes and either blanching or roasting, then freezing, so that come winter all I do is haul enough out to use in whatever winter dishes I want to cook. But not sure if aubergine freezes successfully or not - or if there is any special treatment you need. We're finding our aubergines aren't bitter, so the salting thing is optional.

    Hi, I am really happy to say that I have successfully frozen lots and lots of aubergines!!! I slice them about 1 1/2 - 2 cm thick and then put them in the griddle pan with olive oil until cooked on both sides! The griddle pan then gives them the black char-grilled lines. (Or you could cut them into fairly chunky cubes as they do shrink a bit when cooked). I then pop them into plastic containers, oblong/rectangular, put the lid on and put them in the freezer until needed. When it comes to using them, I just put them in the microwave from frozen et voila or you could just let them defrost at room temperature!!

    My children love them in pannini rolls with maybe a slice of mozzarella or beef tomato or alternatively I add them to my 'pasta al forno' or lasagne, moussaka, aubergine parmegiana, or just on top of some plain pasta with tomato sauce.

    I successfully froze about 60 aubergines in this way this last time, and before that about 40!!! (I only do this when the price is good).
