    Hi

    Searched and searched the internet for a good old fashioned onion chutney recipe. Pleeeeeeeeze does anyone have a recipe for me.

    Ingredients :


    Onions Big 1 no
    Green chillies 2 nos
    Red Chillies(dry) 2 nos
    mustard seeds 1 tsp
    urad dal 2 tsp
    tamarind dry 1 small piece
    salt to taste
    brown sugar 1 tsp
    oil 1 tbsp
    Method :

    Chop the Onions coraesly

    In a pan heat the oil & add 1 tsp of urad
    dal,&chilliies. fry for a minute. Add the Onions & salt.

    Fry till all the ingredients gets mixed & raw smell of
    onions are gone.

    Let it cool completely . Add the tamarind,brown sugar
    & grind it to a fine paste . DO the seasoning with the
    other tsp of urad dal , mustard seeds in a tsp of oil.

    Enjoy with steaming Dosas or just plain rice.

        Siver fox I will try your onion chutney next time I have a curry, but it's a preserve that I want. One that will keep in a jar for a few months. Red onion chutney sounds just the thing.

          Onion and apple pickle

          4lb (2kg) onions
          2lb (1kg) cooking apples
          Spiced vinegar

          Peel the onions and cut into thin slices. Peel and core the apples and slice, or cut into cubes. Mix the two together quickly or the apples will turn brown. Pot at once in clean jars, cover with the hot vinegar and seal.

          This pickle can be eaten the following day, as neither the onions nor the apples have been salted, but it improves with keeping.

          Hope that is of use swampie sue. I've not tried it. To make spiced vinegar just boil up the vinegar with some pickling spice in a muslin bag. Although my mum always used to chuck it all in and if it went in the jar well so be it.

              At last - red onion chutney!

              8 sliced red onions
              100g caster sugar
              100ml red wine vinegar
              100ml red wine
              1 tbsp cranberry juice

              Place the onions and sugar in a saucepan, cover and cook for about 10 mins until soft
              Pour in the red wine and red wine vinegar then simmer for a further 10 mins until the mixture is sticky
              Stir in the cranberry juice, mix well and leave to cool and then transfer to warm jars

              This should be stored for at least 1 month to let the flavours develop

              (Recipe from my best friend's mum, who is a great cook. She apologies for the vagueness of it, as she tends to jar it in whatever she has empty!)

                Thanks, sounds just what I have been looking for.... Also sounds wonderful can't wait to get some red onions.

                The recipe has now been written out and put in my special book...
