  • salt water?

    You know you can buy peas in brine (salt water)? Well can you do it at home? I take it the veg needs to be cooked, but then do you just put it in a jar of salt water and leave it till you want it???

      No there is slightly more to it than that. You pack the vegetables into jars and cover in a hot salt water solution. Then they need to go into a pressure cooker (with the lids on) for a set amount of time to sterlize them so that they will keep.

          Some things keep flavour and colour better in brine than freezing, also it is more traditional which appeals to me. Like all foodstuffs you need to do it properly, right amount of salt, right sterilising etc. 'Preserved' is an excellent read.

            Have to agree with you there JazzDuke. Preserved is one of the best reads I've had in ages. Loads of info and yummy recipes. I'd highly recommend it.

            Am quite keen on building the dryer that is in the book for next year.

              My freezer is ALWAYS full, unfortunatly that has nothing to do with how much i have grown! I wanted to try as many different ways to store things, also i have seen some very decretive jars and if on a sideboard they would look nice. Will have a look at that book. can`t find that book on that web site, so will look in town.
